- 12 medium mushrooms (the variety you like the most)
- 2 garlic
- 1 leek
- 200g. dried tomatoes
- 1 teaspoon dried oregano
- Parmesan cheese or any cheese to gratin to taste
- 2 cloves of garlic
- ½ eggplant
- 200 ml. of white wine
- 6g. of fine salt
- Fresh chives to decorate
Cleaning the Mushrooms
- We begin our preparation by cleaning the mushrooms from the ground with a brush. We remove the base with a knife, scrape the stem to remove all traces of soil if necessary. We rub gently with a damp cloth.
- If the mushrooms are very earthy, we can run them briefly under running water, making sure to dry them immediately to prevent them from absorbing water. Once clean, we cut the mushrooms to taste. We reserve to put in the filling.
Vegetables, filling, baking and presentation of mushrooms
- We wash, peel and cut all the vegetables into very fine pieces, as well as the tomatoes, well drained of the oil.
