Tips for making zucchini jam

Zucchini jam with orange and lemon is prepared as simply as from berries or fruits. We will not add any thickeners during the process; everything will work out just fine without it. If at the end you feel like the jam is a little runny, don’t worry, it will thicken over time.

As for vegetables, you need to take young zucchini. If this is not possible, the mature vegetable must be deprived of its seed box and hard peel. But in the latter case, you need to weigh the zucchini for the recipe after peeling.

If you want to get more experimental, try adding ginger, dried apricots or apples to the zucchini jam.

Step 1: Prepare Zucchini

  • Wash 1 kg of young zucchini and cut off the tails. Cut the vegetables into small cubes of approximately the same size.

Step 2: Prepare Orange

  • Wash the orange thoroughly and grate the zest on a fine grater, without touching the bitter white part. Squeeze the juice out of the orange.

Step 3: Cook Zucchini

  • Place the zucchini cubes in a saucepan and add 100 ml of water. Add 600 g sugar, 1 cardamom box, zest and orange juice.

Step 4: Simmer

  • Bring to a boil, then reduce heat and simmer for another 45 minutes, stirring occasionally. During this time, the moisture will evaporate a little and pectin will form.

Step 5: Sterilize Jar

  • Meanwhile, preheat the oven to 180 degrees and set the jar to sterilize for 20 minutes. Leave the lid to sterilize in boiling water until we close the jar.

Step 6: Finish the Jam

  • Add the juice of 1 lemon to the pan, stir and cook everything together for another 5 minutes. Place the jam in a sterilized jar and close the lid.
