- 100g. smoked salmon
- 4 slices of rustic or village-type bread (or slices of whole wheat or thick-seeded bread)
- 4 eggs M
- 1 head of lettuce (it would be worth replacing it with arugula, iceberg lettuce, your favorite mesclun…)
- 20 ml. yogurt sauce or mayonnaise
- Salt and freshly ground black pepper (to taste, it would be for the eggs)
- Dried dill (if you find it fresh, much better)
- 10 ml. extra virgin olive oil (just enough to toast the bread and make the eggs)

Step 1: Unveiling the Salmon’s Flavor
Open the packaging of your smoked salmon and carefully separate the slices. Allow them to breathe and develop their distinct aromas. Allowing the salmon to breathe enhances its flavor, showcasing the nuances created during the smoking process. Notice the transformation in color from the closed container to a richer, more pronounced hue.
Step 2: Bread, the Canvas of Flavor
The choice of bread is crucial in creating the perfect foundation for your smoked salmon toasts. Whether you prefer a rustic village bread or an artisanal loaf bursting with flavor, the decision is yours. Using a sharp knife, cut the bread to your desired thickness.
Step 3: Toasting to Perfection
In a medium-large non-stick frying pan, heat a few drops of extra virgin olive oil over maximum temperature. Toast both sides of the bread until they achieve a golden crispiness. The key to perfection lies in using a spatula to press the bread, ensuring it becomes crispy without burning.

Preparation of scrambled eggs
- In the same pan in which we toasted the bread, we are going to prepare some simple and quick scrambled eggs . Scrambled eggs do not contain creams or milk and must be seasoned once they are made, as with fried eggs.
- They can be made directly, but if we separate the white from the yolk, we will give it the perfect point since the yolk does not have to be cooked too much so that it comes out with an airy and moist texture.
- The secret to preparing rich and delicious scrambled eggs to perfection is in the way they are mixed and stirred, all you need is a low heat and a little patience to achieve a good result.
- We add them to the pan and stir constantly and in an enveloping manner with a wooden spoon. We constantly separate what sticks to the walls and bottom of the pan. When the eggs are still moist, but not completely liquid, we put them together in the center.
- We turn off the heat and we will see the egg that is still cooked because the pan is still hot, we remove it to a plate. Season with salt and pepper and add a little chopped dill.
Preparation of salmon toasts. Final presentation
- We spread the toasts with some homemade yogurt sauce or mayonnaise . You have several options, make it at home (in the blog we explain how) or use a brand you trust or that you like.
- Sprinkle with dill and stir until all the flavors come together. We cut our lettuce into very small squares and sprinkle on top of the bread toasts. We press with our fingers so that it sticks to the sauce.
- We cover with the scrambled eggs and top each toast with the slices of smoked salmon. Sprinkle with finely chopped dill and a bit of extra virgin olive oil (the best we have at home). Straight to the table and eat. You will succeed!
